Smoked Turkey Recipe, Weber Genesis II Gas Grill

  • A 15-pound turkey, Smoked in a Weber Genesis II E-310 Propane Gas Grill. Apple Wood Chunks are used. This video gives the full step by step recipe and process.
    D Grill's Smoked Turkey on a Gas Grill Recipe
    Ingredients:
    1 Whole 15 pound Turkey, thawed.
    Brine of choice
    4 Cabbage Leaves
    1/2 Onion
    1 Celery Stalk
    1/2 Stick Butter (chopped in cubes)
    Olive Oil
    1 Cup of Melted Butter
    Salt
    Pepper
    Sage
    Turkey Rub of choice
    Wood Chunks: Applewood
    Instructions:
    1. Thaw the frozen turkey in the refrigerator. This may take 4 - 5 days.
    2. Unwrap the turkey, remove any leg ties and any innards from the inner breast cavity and the rear. You may place them in the trash, unless you need them for another dish. And pat the turkey dry with clean paper towels.
    3. Brine the Turkey for 24 hours, in a zip sealing brining bag, that is in a roasting pan, that you leave in the refrigerator while brining.
    If you don’t have a zip sealing bag, you may have to put the brining bag in to a bucket and put that into the refrigerator.
    4. The next day, chop onion and celery into large chunks.
    5. Put 2 cabbage leaves under one another like a bowl.
    6. Place onion chunks, celery chunks and butter into the cabbage bowl.
    7. Add salt, pepper and sage to the cabbage bowl, to taste.
    8. Place 2 cabbage leaves on top of the cabbage bowl, so it is a ball shape.
    9. Take the turkey from the brine and pat the exterior dry with clean paper towels.
    10. Insert the cabbage ball into the open breast cavity of the turkey.
    11. Tie the legs around the body, so all limbs are tied in.
    12. Cover in Oil
    13. Sprinkle on rub
    14. Smoke breast side down (legs down) in a roasting rack at 325 degrees F, for 2 hours.
    15. Flip the turkey to breast side up (legs up) directly on the grill grates.
    16. Insert temp probes such as iGrill 3 meat probes. One into the fattest part of the breast and a 2nd probe into the thigh.
    17. Let cook another 2 hours.
    18. Brush on melted Butter after the skin turns brown. Since the skin is already crispy by then, it will enhance the flavor. After the 2 hours breast side up may be a good time.
    19. Continue to cook breast side up till 165° F temp at fattest part of the breast, 180° F in the thigh.
    20. Set the turkey in a pan, to rest at room temperature for 30 minutes.
    21. Enjoy!
    Note: Food safety guidelines mention, turkey meat should be removed from the bones within 2 hours after cooking your turkey. Legs and wings can be kept whole.

    I kid you not, this is the best turkey I have had in my life. I very highly recommend you try this method. The brine plus the flip method make for super moist and flavorful meat. Me and all 3 of my boys totally enjoyed eating this for dinner. And getting all 4 of us to like the same thing is a tall task.
    My personal goal, was to do something on par with the smoked turkey I have had from Honey Baked Ham. But now, I will never buy a smoked turkey from them or anyone else. So long as God gives me strength and means to make my own, like this.

      So you've inspired me. I'm going to try something tomorrow for the first time. I picked up 2 turkey breasts, about 3.8 lbs. each. I'm going to inject them with a store bought marinade that's mostly apple cider and pineapple juice. Let sit overnight in cooking bags. I have a rotisserie so thought I would smoke/grill them using apple wood chips. any pointers would be appreciated.

      Just keep a sprayer water bottle handy, to keep the flames down. That would make heat fluctuations.

      Another fantastic video, but may I recommend you use Alton Brown's turkey brine? My wife and I have used that since 2005.
      1 gallon vegetable broth, homemade or canned.
      1 cup kosher salt.
      1/2 cup packed brown sugar, light or dark.
      1 tablespoon whole black peppercorns.
      1 1/2 teaspoons allspice berries.
      1 1/2 tablespoons candied ginger, chopped.
      1 gallon water, iced.

      That's a great recommendation.
      Believe it or not, I just received another order the same brine I used in this video, for an upcoming cook. And the cost of return shipping makes it less fun to return now. But the "turkey cook after next" I will try your recommendation. Alton Brown is a class act.

    Great video. At 20:29 I was most amazed that it fit with the warming rack up, and that it didn't touch the inner grill lid. Did you get new meat probes? The wires look absolutely clean. I can't get mine back to that even after cleaning. Lastly, impressed that you didn't use gloves to remove it from grill. Those are strong grill tongs.

    I'm curious if when you do this again you'll switch to the direct thigh heat sooner in order to try to get the two different temps (165 - 180)? Or will you perhaps tent the breast at some point? It looked plenty moist as is to tell you the truth. Love the channel. Thanks.

    What did you soak the chips in, and for how long did you soak them?

      I didn't use wood chips, I used Wood Chunks. See the referral link in the video description.
      Soaked 1 - 2 hours in water. You only want to use enough water to nearly cover them, no more. With _wood chips_ you can soak those maybe 30 minutes to an hour and be good. Wood chips will burn out faster and cost more.
