I think it need more sugar like 2or 3 cups and cook until it makes a clean mark in the pot when turning then place on fig leaves or flat dish shaping spoonful as you go and no need to wet or grease leaves or dish when dry it will be remove very easily.
Did you use all 3grated coconuts what is the reason for spraying water I'm new to this one ,we usually use oil can you please explain ,would harden up properly

Maybe you add less sugar or you had to cook it more so the water can come out to let it dry.
