They create a karaoke track for their patrons, that's what they've been playing during the outro. So, even if there isn't an extra scene, we get to hear all of the harmonies without the melody and appreciate them more.
"Beata Maria" means "Blessed Mary." The POV character is trying to pray, and a bunch of the background vocals are Latin taken from an old Catholic prayer called the Confiteor ("I confess.") They're refuting the main lyrics: Frollo knows perfectly well nobody else is to blame for his sins of lust, pride and cruelty.
