It's not just the fruit that can be eaten, the young leaves of the cactus can be eaten too! In Mexico and parts of the USA, we usually cut them up into tacos, soups, and salads - they can be stewed, thrown on a bbq and roasted, or blended into salsas, or eaten raw. Just have to be careful of the needles, and cut them off. Try not to eat the older bigger leaves because they can be a really sour/bitter, and tough to chew.
