私も３０年前にカナダでbakeryをオープンさせた時のことを思い出し自分のことのように見入ってしまいました。仕事は華やかそうですが実際は肉体労働、私は腰をやられましたがどうか健康だけには気をつけて頑張ってほしいです。どうか休む勇気を持ってほしいと思います。私も開店当初は週一の休みでしたが結局休みの日でも１日仕込みでなくなりました。５年後に週二日に休みをしましたが売り上げは心配しましたが結局全然変わりませんでした。お客さんが休みを見越してその他の日に来てくれるようになりました。自分語りですみません。
저도 작은 베이커리카페를 운영하면서 매일아침 6시에 일어나서 빵을 굽는데, 이 베이커리의 1/3도 안되는 종류의 빵을 굽는데도 상당한 인내와 성실함이 요구됩니다. 처음부터 끝까지 음미하듯이 봤는데, 젊은 셰프의 진정성과 성실함이 가슴 뭉클하게 다가옵니다. 성공을 응원합니다.

Believe in yourself, dont get overwhelmed, you can start small then grow big. Be consistent.

obviously he's very accomplished, but how do you determine he is the number one baker in Japan? I don't think it's possible to make that determination, and to make that claim in the title is misleading...
