Hi Kay, Love the vid. Maybe you could try Beetroot and beef meatball traybake next. 2 medium baking potatoes 2 beetroots, including the stalks, scrubbed ½ tsp caraway seeds 3 tbsp olive oil 2 tbsp white wine vinegar ½ tsp fine sea salt Pinch sugar ½ bunch dill 1.2Kg of Mincemeat made into meatballs Heat the oven to 180°C fan/gas 6. Cut the potatoes into 1.5cm cubes, rinse and leave to drain while you cut the beetroot into similar-sized chunks. Put both on a large baking tray, season with salt and scatter over the caraway seeds. Drizzle over the oil, toss together to coat, then spread into a single layer. Roast for 15 minutes. Meanwhile, finely chop the beetroot stalks. In a bowl, combine the vinegar, salt, sugar and 1 tbsp water. Add the beetroot stems and set aside to quick pickle. Finely chop most of the dill and stir it through the soured cream. Turn over the potatoes and beetroot and add the meatballs to the tray. Return to the oven for about 15 minutes, until the meatballs are cooked through and everything has browned. Add 1 tbsp of the pickling liquid to the soured cream, then spoon the pickled stalks over the veg in tray. Serve with dollops of the soured cream plus some extra dill scattered over.

That meal looked something else, right nice and tasty. I love mushrooms, they're probably my favourite thing and that lot. I usually pick my own, any mushroom will do. Although I find sometimes they can make my kidneys quite sore and other times make me diarrhea all over the place. There was one time when after enjoying a mushroom feast I got right thirsty, I was so thirsty I had to fill the bath up and sit in it for a nice big drink. After that, the man on the TV started spooking me out a bit so I took all my clothes off and hid under the bed until he was gone. Fumbs up.
I now can’t stop calling mushrooms ‘mushyrooms’ and onions ‘honeyons’, and everytime I see a spatula, I think of Oompa Loompa’s. Thanks for that Kay!..

There's a recipe I sometimes make with mushys and taters, but it's a bit different: - Dice and lightly fry an onion - Then add beef and stir (with a bit of salt and pepper) until brown. - Add sliced mushrooms and a diced red pepper and cook along for a bit - Then add about 400 grams of (cubed) potatoes, a small tin of tomato paste, 200 grams of sour cream or creme fraiche and a small splash of water and mix it all together - This is also the time to add whatever herbs or spices you like (I usually do paprika, oregano and chili flakes 🔥) - Then put the heat down low, put the lid on the pan and let it simmer until the potatoes are cooked (about 20 minutes) I always like one pot meals bc I don't like washing up that much haha.
If I had a loving and caring mama like you, I would have been so happy. My baby sister boils the potatoes briefly before pan frying so they cook faster. This looks delicious. Can't wait to make this! Feel better soon!

It puts me in mind of a dish eaten all the time in My native Greece Ingredients for Greek Meal “Kos Kozy Meal” it say lamb but you can use Chicken or Beef or Liver or Tin Tuna 8 garlic cloves, crushed thumb-sized piece ginger, finely grated 2 tsp turmeric 800g leg of lamb on the bone, cut into bite-sized pieces 3 tbsp vegetable oil 10-12 curry leaves 1 onion, finely chopped 450ml lamb stock 1 medium potato, peeled and cut into chunks 250ml coconut milk 2 tsp tamarind paste rice or roti, to serve Gelatine 2 packs For the spice mix 1 tbsp coriander seeds 2 tsp fennel seeds 1 tsp cumin seeds 6-7 dried Kashmiri chillies (or mild dried red chillies), stalks removed Method STEP 1 Mix the garlic, ginger, turmeric and lamb together in a large mixing bowl, then leave the lamb to marinate in the fridge for 1 hr or preferably overnight. STEP 2 Toast the spice mix ingredients in a dry frying pan for 12 mins over a low heat, stirring occasionally, until they release their aroma. Leave to cool, then grind to a fine powder using a spice grinder or pestle and mortar. Set aside. STEP 3 Heat the oil over a medium heat in a heavy-based, large saucepan. Add the curry leaves and onions, and fry for 15-17 mins, stirring well. As the onions begin to change colour, add the lamb and fry for 10 mins. Add the spice powder and turn the heat up slightly. Stir continuously for 5 mins. Pour in the stock and season to taste. Bring to the boil, then turn down to a simmer. Put the lid on and cook for 40 mins. Stir halfway through cooking. STEP 4 Tip in the potato and continue cooking for 15 mins. Add the coconut milk along with the tamarind paste and simmer for 10 mins with the lid off to reduce. Add both gelatines. Chill over night and serve with rice

It only has 4 ingredients and was a quick and cheap meal for the family. I would love to see you make it and what you think of it, I think it’s really good! Ingredients for serving of 2: “Tuna noodle “ 90g bag of smiths plain potato chips 185g can of tuna in brine 1 can of Cambell’s cream of mushroom soup 1 cup small pasta shells Method: Preheat oven to 350F Cook pasta in plain water until firm but not hard inside. While pasta is cooking, combine mushroom soup and mushed up tuna including about half of the brine in a casserole dish and mix together well. Do not heat it up. Strain cooked pasta and combine with tuna and mushroom soup mix Crush up the potato chips in the bag until they are about the size of your thumbnail and sprinkle on top to cover ( usually about half the bag) Bake in oven for approx 40 minutes or until the casserole is bubbling near the middle and the chips are golden brown. Done! Oven time can be reduced to 15-20 minutes if you microwave the mixture for a few minutes until it’s hot before you add the pasta and the chips on top.

Get some vienna sausage 4. Get beans 5. boil all of them for 30 minutes exept the pigs blanket, that will be in the oven for 10 minutes straight 6. Dig in😋

Looks pretty good. I would have boiled the potatoes first maybe and then fried them instead of boiling them in the sauce. But onions mushrooms an potatoes is a nice combination.
My advice: slice potatoes thinner OR you can add some water, close the lid and cook for a little longer when there is almost no water left, open the lid, add some oil and seasoning and then roast it as usual.
Get a food processor Kay then you don't have to use frozen stuff. Just chop them up in the food processor. Some even come with a dicing blade. Bye the way, that looks pretty tasty. The oxtail soup made a nice gravy.
