    seeing your carrots triggered a childhood memory for me. when i was a girl there was an older man in the neighborhood named harry. he grew carrots like yours & us kids knew if we asked harry would pull & wash a carrot for each of us. love your videos thanks for letting me live vicariously through you!

    Carrot & beet greens, btw, are edible raw in salads, but even better than that, if you have a dehydrator, you can dehydrate them and grind them into a powder for greens powder, which can be put into soups, stews, scrambled eggs, and so forth, giving everyone a bit of folic acid (good for digesting iron) and a number of micronutrients not often found in bulkier foods. Beet greens contain oxalic acid, which can irritate stomachs or worse in large quantities, but boiling or steaming can help remove the oxalates, including before dehydration. Sometimes the green bits of leeks can also be dehydrated and added to greens powder. And if you want to 'sweeten' the bitterness, spinach and cabbage or brussel sprouts (yes, those things) can also be shredded and dehydrated and ground for adding in.

    Compared to many other shows hands down u two have figured out how its supposed 2 be done. My opinion. Think abt it. The hook 4 me is someone uprooted their life away from the modern. People r curious abt how u will eat.grow.store.food.preparefood. show us how great it tastes from the ground.keep warm.get rid o pests.protect. property. Animals.water. etc...... All sorts of living off the grid stuff. U two nailed the mix of that and couples.fam thing great! U balance it just right. Great attitudes. N energy. With outtakes it helps make us see u as regular people. Not high n mighty. Other shows were. Ugh. One kept making us viewers feel like sht cuz. We have 2 grocery shop.another in Colorado started bashing their own visitors who wernt used 2 walking wooded areas. Used 40 min strait bashing negative. Abt people who tripped. N something is wrong with them. Etc.another one. Husband n wife appeared 2 be fighting 4 vid face time. He kept cutting her off with negative type tone. Hard 2 watch turned it. Another show has 2 much kid stuff n almost zero farming.setting up things. Building. Nothing. It was like a daycare center off grid. I love kids but kinda wanna see u build a shelf in ur chicken coop more.or plant more things. I got bored. I can see kids here at home. One guy almost stopped watching when he began lecturing abt politics like a CNN analyst. Don't wanna hear abt THT sht. His show hook living off grid setting things up same as urs. But glad I decided give him chance hes been good ever since. He was good be4 THT odd episode.he has balance 2. Anyway thanks

    You have no idea how much I enjoyed this video. It's been decades since I saw real carrots. I get sick of seeing F1 hybrids and having to put up with their bland taste. I envy you guys having real organic unaltered varieties. Well done on your bumper harvest.

    We stored them between layers of shredded newspaper and would put them away only after the dirt completely dried. Potatoes the same way. Apples and pears we wrapped in newspaper. We canned a lot of beans, tomatoes, peas, meat, fosh, carrots, some potatoes and turnips. Cabbage was made pickled same with cucumbers. Corn was canned and frozen.

    Did you know you can wash and the boil the carrot greens and use for veggie stock! Golden beets are the best boiled, peeled and eaten warm. No need to even put salt on them!!! Yummmmm

    My father used to store veg in a similar way during WW2. They used to put straw in a hole then cover with more straw and then cover with earth. They called it a Tump in Wales.....Just an aside.

Those were some huge carrots for sure and leeks are one of my fav vegetable to eat, I love them better than onions.     Keep your beet greens . The larger leaves make great mini cabbage rolls . Beet greens are healthier than spinach

    When the carrots get a bit dried out this winter, just bring them into the kitchen a bit earlier in the day...cut off the ends, and then cut them into chunks. Pop them into a bowl. Cover them with water, and put them in the fridge...or whatever's nice and cold.
    Don't try to peel them till it's time to cook dinner, but by dinnertime, they should have crisped up, and be much easier to prep and eat.

    Growing up, we always stored carrots with sawdust from a lumber mill.
    The past two years, and this year, I stored them in moist sand.
    I like the moist sand better.
    In my cellar, they kept eleven months!

You’ve done so well to grow so much high quality produce - I don’t think I’ve ever been able to grow that size carrots, beets and leeks here in Australia.       @@thelandofmint Are you serious? Do you know what Winters are like in Alaska?? Do you have any idea how difficult it is to take that late night jaunt to Wal-Mart's for the 'oops I forgot' grocery run? How many grocery stores do you think they have outside of Seward, Wasilla and Ankorage? Lol at this comment! The canning they do preserves food for sometimes years. Both them AND THEIR ANIMALS survive on that food for 3/4 of a year before they can stock up again. Too much food?!!?! Yeah......no, I don't think so.

    You should try making pickled eggs in beet juice with beets that you grew, they are pretty good and easy to make.

    Love those beets--pickled and/or fermented. Cleaned, dried then dipped in paraffin wax keeps them fresh looking 4-5 months. Good looking produce!

      I’ve only eaten pickled beets. Never tried roasting fresh ones until lately. I’m going to plant a few next Spring. I’m about to harvest my turnips here in middle TN. Just dug my sweet potatoes.

      @@jonihughey1352 my mom made beets tolerable for me by first boiling till tender, then she sliced them about 3/8 inch thick then sauteed in butter with plenty of salt and pepper. Even the canned ones are much better this way IMHO 😎

    Beetroot caviar. For cooking, we need: Beets - 4 pieces. Onion - 1 head. Tomato paste - 2 tablespoons. Sugar - 1 tablespoon. Salt to taste. Ground black pepper - 0.5 teaspoon. Vegetable oil for frying vegetables. 1. Four raw beets on a fine grater and fry for 5-7 minutes in a frying pan in vegetable oil. 2. Cut onions into small cubes, fry in a separate pan for 4-5 minutes until transparent. 3. Mix the vegetables in one pan, add salt, sugar, tomato paste, mix. Cover and simmer for 15 minutes. 4. Add seasonings, mix. Fry for another two minutes and you're done! Cool caviar.

    WOW! Look at that magnificent soil and those spectacular vegetables!
    Here in the California Sierra near Angels camp we get snow and learned from and old 80's episode of the PBS series The Victory Garden how to layer a good two feet of straw over our rows of root crops as well as cabbage, cauliflower, broccoli after the first frost so that when snow came and temps dropped we could still be harvesting the vegetables well into March.

    Try packing your carrots in sand. They store well. Just an option if you're paying for those shavings.

    God morning we are enjoying your videos very much.
    Couple of tips excess manure can cause some carrot varieties to become hairy like your purple ones.
    Leek are great for drying.
    If you soak your carrot in clean cold water they will store better.
