Khao Man Gai /Thai Chicken rice/Hainanese Chicken and Rice

- How to Make Khao Man Gai ข้าวมันไก่: Thai Version of Hainanese Chicken and Rice. fragrant rice cooked in rich broth. This is my favorite dish. When my brother and sisters and I were little, my mum often made it for us on the weekend. She passed away 22 years ago, but I always remember this dish. The recipe for the sauce is from my mum.I’ll show you how she made the dish and the sauce. I hope you’ll love it. Enjoy!!

FOR THE CHICKEN:
2 large skin-on chicken thigh/leg or breast
FOR THE RICE:
2 cups jasmine rice( measuring cup)
2-3 Tbsp oil (rendered chicken fat)
2½ cups chicken stock, unsalted
5-6 pieces bruised ginger.
1 tsp sugar
1 tsp salt
Cilantro and Fresh cucumber slices for serving
For the Dipping Sauce:
4 Tbsp ginger, finely chopped
2 Tbsp spur chili
1 Tbsp Tao Jiew (Thai fermented soybean paste)
1 Tbsp palm sugar
1 Tbsp pickled garlic ( brine)
2½ Tbsp Thai black soy sauce
1 Tbap soy sauce
3 Tbsp vinegar
chopped Thai chili, optional, to taste

Cooking the chicken in the rice cooker with store bought stock makes this awesome dish even more quick and easy.. wish I could find the right winter squash and pandan where I live, but I use both galangal and ginger.. plus duck fat for waking up the aromatics is a nice little msg boost.. don't tell anyone, but I used a bay leaf instead of pandan when making the chicken broth (boil chicken separately.. not this method) and it was a good decision.

Where did the chicken stock come from? Or do you just need to have some on hand?
I like the idea of cooking the chicken in the rice cooker I rarely have chicken stock ready to go so it’s not as easy. And using store bought chicken stock to me just seems too weird for this dish, espcially if you’re drinking it as a soup as well
Thanks for your comment! I'll be covering how to make the chicken stock in another video. You can prepare it either by using chicken broth or by boiling chicken bones with winter melon. I agree, having homemade stock adds a special touch to the dish. Stay tuned for the upcoming video! 😊
There are many dozens of recipe videos of this dish on TH-cam, yet almost none of them will tell you to use the crucial ingredient that every outlet uses liberally in Singapore, Thailand, Malaysia, and that is MSG. Sure don't use it if you don't want to but you will never get the flavour quite like bought kao mun gai.
