  • The best minute you watch all year 🤯 3 Ingredient Italian Tomato Sauce #shorts
    Italian Tomato Sauce. Tomato sauce day also known as “sugo” day is the most important and special day to my family. This sauce is what I use in every single one of my recipes and the most requested tutorial over the years. Gathering and making sauce to last us a year is a tradition that I hold so close to my heart. This Italian sauce making tradition, has been a tradition for generations. Steve and his family are from Cardinale, Calabria and have been making sauce this way for decades. His uncle (zio) Iginio is from Trento, Italy and he also made sauce this exact way as well. This is by far the most incredible sauce which we use for soups, stews, and use as a base when we make pasta with meatballs, with ribs, cutlets, and many other recipes. Traditions are extremely important to me and in Bulgaria we have many that we follow. We have been preserving and canning food for as long as I can remember. In Bulgaria, we never had any fancy machines like we do today, so we always did everything by hand. We would make jam, string bean soup in jars, pickled veggies, fruit compote, vegetable spreads, and so much more. Tradition means everything to me, and I hope I can inspire you.       I experienced a TBI 21 years ago and it changed everything. I remember before that happens what it was like to be coordinated, capable, efficient, effective, graceful, smart, well-spoken and sooooo many other things. I have so many emotions right now. I started a channel to maybe help others like us. I thought it was the best way to use my life and not sit and complain about the accident. But to answer your question yes to gain back skills from and injury of this caliber is a struggle and tons....TONS of work.       I don’t add salt, I add that when I use them and I run them through at least twice. You get a LOT more pulp.

      ​​@@fussyrenovator7551 it's important to add the salt so the acidity level isn't too low other wise it increases the possibility of botulism.& The sauce keeps longer & will also taste much better once cooked.

    i grew up in italy and we would make our own tomatoe sauce every year or two, sometimes with a community of people, sometimes just my family... it's the best tomatoe sauce on earth! i still make my own short version when i make pasta.

      @@sergekannon9048 i don't know the recipe myself. i was a kid... we kids just did some smaller tasks, one year i got to stir a huge vat of tomatoes. i'm sure you can find a recipe online if you look up how italians make their home made sauce.

    Why do you turn your tomatoes upside down? Can't that mess up the jar later on when you turn it back over to stock them in your stockpile? The whole reason to leave them right side up as for them to seal correctly or am I wrong?

      Seals them better. We have fresh jars from 2019 that are still incredible

      There is no actual reason to turn them upside down. The contents can get into the seal can break it.
      If the canning process worked, it's not going to create a stronger, better seal. At best, it does nothing. At worst, it actually damages the seal 🤷🏼‍♀️

    What a great machine ! I just blanched raw fruit to get the peel off then cut them in half to empty the seed pulp out...then cook down. I had to do this for my families digestive issues. People have no idea what crap manufactures put in retail products...and legally call it "natural" cause our government allows it.

      My mum recently started using your method except she'd blend the skinless blanched tomatoes. This is the first time I've eaten pasta and been able to move afterwards. You're right about the fact that it really helps with digestion

      You're right that "natural" isn't a regulated marketing term, by even natural additives can cause problems. And the tomatoes themselves, of course, being acidic.

    This is what I love about Italian cuisine. A few simple ingredients that are allowed to shine. Good quality tomatoes have such a depth of flavor! All they need is a little bit of salt to bring it out and some fresh basil to provide another layer of complexity. Nothing to hide behind if the ingredients are subpar.

    I miss these days. I no longer have access to good tomatoes to do this. Nor do I have a basement to store the 250 pounds I used to make. 😞 I miss this delicious tradition.

      I live on the west coast in the desert and I miss Louisiana creole tomatoes which is what the New Orleans Italians used to make sauce. I feel your pain

    I used to do this with my granny and mom. My job was to wash the tomatoes but I had to help remove skins by hand as we didn't have a machine like yours. Good times!

      Yes. Blender, sieve, and a pot. Blend raw tomatoes in the blender, strain seeds and skin through the sieve into a pot, heat up, can safely. (You need to add acid like lemon juice to stop spoilage which is not mentioned here.)
      No salt, no basil. No nothing but fresh tomatoes and required acid.

    You can make tomatoe oil with the skins too. Its just red oil but it is really ncie for garnishing. The colour is really stong in the skins.

      @@shiann2309able Sugar does cut acidity but it’s the acidity that comes from mass produced canned tomatoes. I forget exactly why but they have more sharpness and almost a slight metallic taste, sugar cuts that somehow and makes them taste more like fresh tomatoes!

    Just curious, I'm new to canning but aren't you supposed to add lemon juice or citric acid? Do you measure your ph when you make your sauce? I thought tomatoes were right on the edge of safe for water bath canning.

    I do a very similar sauce but i also use the grill (peach, alder andcherrywood) roast, peel, prick and place a few of them in each jar, you get this light smokey and sweet flavours that pairs so well with red meat, fish and herbs like thyme and rosemary♡

    This reminded me of when I was living in Italy. We would go to the market and buy crates of tomatoes (in season) and then do this. Now I live in the UK and the tomatoes don't taste the same 😢

    I wash the skins really well. Once separated, I blend them and then reduce on low heat on stovetop. This makes a nice tomato paste. Sometimes I throw in a red bell pepper for a nice smoky flavour.

    There are many ways to make that sauce much more flavoursome. the basil will do next to nothing if not ripped or at least bruised because the oils will just stay in the leaves.

    we do it slightly different. we wash tomatoes first and then cut off stem and cut in half to ensure no rot on inside then we cook tomatoes and then pass through machine

    I’ve always thought there was definitely food coloring in it. The tomatoes in my country is clear light pink on the inside so I didn’t know.

    You need to add something acidic to prevent botulism. No boiling it isn’t enough.

      No you don’t. Tomatoes are acidic enough. We have ours for YEARS without anything happening.

      ​@@themodernnonnathis is dangerous misinformation. There is a reason Italy has some of the highest rates of botulism in the world. You've been lucky so far. Tomatoes need to have acid added or be pressure canned in order to be safe

    My Mom used to let the jars stand overnight. With a towel over. But they were right side up. Always.
    What's the purpose of turning the jars upside down ?

    Use bakingsoda and water first to get any pesticides off. Then wash them, then put them in clean water

      Hi love, If you make them like us, they will keep fresh in the pantry or cantina for 2 years. We still have sauce from 2019 and 2021 that’s perfect. Make sure you store them in a cool dark place. ☺️

    I know you’re from Toronto cause you got those Knobhill Farms baskets. Multifunctional baskets! Laundry basket, storage tote, for produce. We use them for the tomatoes as well.

    can i ask what storing the jars upside down after the boil does? ive never canned/jarred my own food

      You don’t have to but my family has for generations. This is called inversion canning. The thought behind the method is the hot food will sterilize the seal while creating a vacuum by allowing air to escape. You don’t have to do this step though. My hubby’s Nonna, Nonno has and many prior generations so they have never changed it.
