- Just add eggs to the noodles and you will be amazed! Cheap and tasty! Today I want to share with you a very simple, quick and delicious recipe! In addition, he is very versatile. Substitute almost any cheese for the parmesan (or leave it out entirely) and add some veggies or meat. Do it your way. This dish is ideal when you don't have time to cook! Have a nice day! Tired. It's 8:00 pm here in California. This reminds me of when I was little. When there are 4 children, mom never threw away food. One of the go-to things was pasta with diced stewed tomatoes. Simple but filled our stomachs. If there were any left overs after dinner mom would save them and on Saturday morning for breakfast she would scramble eggs over the noodles. Soooo good! And like your dish, there was usually either bacon or sausage. Mom was German and crazy about sausage. 😋🥓🥚

I love that!! Sounds like good memories. As a single mom, I would make tuna fish sandwiches on toasted bread and I slice of a nice tomato. Then a side of cheap macaroni and cheese....

Not sure folks always seem to confuse bacon with a traditional Italian carbonara. Guanciale is used, not bacon. Maybe you just need to put all pork as just one type?

Had this tonight for supper, with macaroni noodles instead, and bits of bacon. This is a comfort food for me. My Mom used to cook this after we emigrated to Canada, in 1959, and didn't have much money at first. Still love it, and I'm 72, now.
Kind of like carbonara (same ingredients) except the eggs are allowed to fully cook and harden into an omelette-like substance. Looks delicious!

Carbonara only uses the yellow part of the egg, not the white part. 👌🏻 that why they dont fully get cooked because you can eat then raw.
@@mauroa.4993 Most recipes I've seen use whole eggs, though I think there are some that only use the yolk. Maybe it's more traditional to only use the yolk? That's very possible!
I usually use a few whole and a few with only yolk. I allow it to cook partially (not to where it's scrambled) in the noodles.

This reminds me of my childhood. We used to make this a lot with my sister because it was cheap. Only, we didnt fry the eggs to form a crust. We just stirred until the eggs were cooked. But everything else is the same.

Ich habe dieses Rezept heute Abend gemacht, Ms. Nata. Ich habe geräucherten Gouda-Käse hinzugefügt und es war köstlich. Mein 15-jähriger Sohn fragte, ob ich es morgen Abend wieder schaffen könnte. I´m absorbing this from Spain.
This is a dish I grew up on in the US. My mom grew up in Poland and it was a cheap staple when she was young. It's still one of my favorites/regulars. We always pan fry the noodles in butter and don't whisk the eggs (allows for combination of egg whites and yolk throughout dish). Just lower the heat and dump them straight into the noodles and stir for a couple minutes until eggs are cooked, salt to taste after. We also use angel hair/very thin spaghetti noodles. Loved seeing a different version though, made my day!

I would prefer the Angel Hair Pasta as well, but do like the eggs mixed completely. We prefer the bacon crispy, too. But after pouring the noodles into the buttered pan and mixing in the eggs, I cook just until they begin yo set. Turn off the heat and quickly add the grated cheese, mix thoroughly, add crispy bacon or guanciali. Remove to bowls instead of frying the noodles so all is creamy. Sprinkle with freshly chopped parsley and serve. A very tasty luncheon. Might add a fresh salad of baby spring greens/lettuces and any extra veggies you want. Croutons and a vinaigrette. Yum.

Hallo ! Als Italiener ich weiß jetzt nicht genau, was ich davon halten soll. Am Anfang sehe ich da ….sagen wir mal so…. eine Art „Carbonara“. Später wird es zu einer Art „Frittata“ mit Spaghetti (eine richtige Frittata wird aber normalerweise von beiden Seiten gebacken).
PS: Sagen wir, dass es am Ende weder eine „Carbonara“ noch eine richtige „Frittata“ mit Spaghetti raus gekommen ist.

Very smart and different way to prepare carbonara. Looks delicious! I will surely prepare it for a little change on the original.
Now regarding some comments below, carbonara was born in Rome at the end of WW2 when the US troops brought dehydrated eggs and bacon with them to the population who produced the first carbonara.
Carbonara is therefore not in fact a traditional Italian recipe. It is absurd then to say that pecorino cheese is the real cheese to use rather than Parmesan, or to say to use guanciale rather than pancetta (non smoked bacon), or to not use eggs'whites in it.
Usely In Italy, families prepare carbonara based on their own tastes and regions where they live into.
So your recept is just perfect the way it is.
