I know all these people. How in the world do you manage, as non-native Austrian, to get this so perfectly. I'm really baffled, no joke. You really understand the stereotypes of rural Austria better than most Austrians.
Austrian culture is in your food too. How on Earth can a vegan enjoy any of it? I understand being a vegetarian -I used to be one- but Vegans really don't make sense. That's before I even get onto the B12 issues. Take Gröstl- Get rid of the egg and the bacon/ham/lardons, and all you have is a pile of fried potato and onion with a maybe a 'subsitute' protein product in it that gives a flavour that does not a mouthful of Gröstl make. Plus butter always tastes miles better than oil for frying it. (and they won't have it that either) There's no substitute for Palatschinken, or a filled savoury Knödel of any kind because they won't eat liver or cheese. )At least vegetarians can enjoy some authentic food if it's a traditional cheese version. Germanic food is centred around bread, cheese and meat. If the refuse to even enjoy cheese from the most free range, well treated cows in the world, ) despite the fact the were not killed like meat cows are, then don't feel sorry. The should just go and feast on wild Johannesbeeren.
I'm not vegan but I don't like eating meat every day. It's difficult to find good vegetarian options in Austrian restaurants, and even harder to find vegan food, because 99% of traditional vegetarian dishes contain cheese or eggs or other dairy products. Also, if you order the vegetarian option they assume you must be vegetarian or you would have ordered the meat. I once ordered a falafel sandwich but they were out of falafel, so they offered to do something with tofu. I ordered chili con carne instead and they were really confused. "But... That's meat?"
Sounds like the equivalent problem that people with lactose intolerance have in the USA and here in the UKß you ask for a dairy free meal and then only have vegan disappointment, and can't understand why a meat eater would eat dairy free.

Have to say, anyone deciding to be Vegan for 'environmental reasons' or because they thing that animal farming can only be conducted as 'cruelly', WHY are you still vegan if you live in Austria?! I have been there and their cows ROAM WHOLE MOUNTAINSIDES. They graze on the wildest grass going, they are the ones who rule the pathways, not humans, they get talked to by farmers and when they get could in a mud slide or fall down a mountain, they get AIRLIFTED BY HELICOPTER to safety. Austria (also Germany) have the best animal welfare standards and the most free-range pastures you can find. Why go vegan? As someone who was diagnosed with Coeliac disease and her first holiday abroad after that was to Austria, I realised that trying to be vegetarian AND gluten free in a germanic country was insanity. I experienced non of the food and missed out on a big part of the culture. After lockdown I longed for Austria so much, and the food was one way I could feel closer, so what with that and the fact we had food shortages in the uk (which made it more difficult to get gluten free veggie stuff) I went back to being an omnivore. Haven't looked back. Gröstl? JAWOHL! I'm there.
