if you've gone into settings and set it up, it is operated by pressing the start button while you ride along in first gear through the pits, be careful though because if you release the start button with the throttle rolled on it will immediately go to normal revs.
great question, I have no idea mate ... my first thought is that you need an OBD connector and software to do this as it would be a setting within the electronics.
It was so Informative, I Haven't known that bikes have a Pit limiter from its factory Itself.

In my15 it doesn’t work in sport mode so it’s year dependant Also with different sprockets will obviously have an effect on rpm/speed

I am not sure that it does mate, you'd need to check the manual but I suspect it was a feature on later bikes
