I’ve been making woodfired pizza for a little over a year and I live in NYC.Just watching his video has inspired me. Trust me that this style of pizza for me honestly trumps all the rest. It’s crispy, light, and packed with flavor. And it digests very well. Just from watching I suggest everyone take a trip to the Bronx!!
I believe he said "everything you cook IN South Italy, there's anchovies". Not "everything you cook INSULTS Italy" haha. I'm sicilian it makes more sense, considering we eat a lot of anchovies. Especially on pizza
That bit confused me too. Anchovy pizza is older than Margaritha pizza, as pizzas were made before tomatoes made it to Italy. And the flatbreads with anchovies on them were the most common in Italy, because anchovies were plentiful and cheap food that everyone both poor and middle class enjoyed. So much that it was brought from Italy to America, purely out of tradition. Even if it didn't sell as much with Americans, the Italian restaurant owners still offered it for other Italians and themselves to eat to feel at home.
god that looks amazing. anchovies seriously don't get enough love. i ordered them on a pizza once at home in texas and it was so rare for them to use it they didn't know how-- threw on like 50 of them. covered the whole pie! was so salty it was inedible :D
I'm Greek, but I know that anchovies are like nature's MSG to Italians. They sometimes use it instead of salt, you can't even taste it but it makes a world of difference. Delicious stuff, much love and respect to our neighbors!

I'm from Salerno and this is absolutely correct. The Salerno style is a lil bit more crispier than the Napoli style. Anyway only seeing it, it's a really well made pizza. Trust this man!!!

I actually stayed in Salerno during a trip to Italy with my family. Didn't visit anything in town, just used it as a place to stay while we visited Pompeii, Paestum, and Amalfi. We DID however go to a really nice Pizza place though and it was one of the best pizzas I had ever had. We actually got 3 Pizzas, 2 Margarita and one other one... the name escapes me however.
One of the most singularly important quotes was left out of the captions of the video, unfortunately; it's a sentence that sums up precisely the inspiration, appeal, and reasons for continuing success of this and other types of old-school and reliably delicious foods: "Just peasant food, simple." at 3:44. This is a common refrain among immigrants, in my experience, that is rooted in humility, and is something to remember. Real food is passionate and authentic. This place looks great; thanks for the video, FWF.
OMG it looks soooo good. And if a place is run by a person who is a foodie, like this gentleman, who has good taste and hopefully can cook some to set the tone for the chef(s), you can't miss.

Isn't it fair to say that the difficulty of understanding is something subjective? For example, to me this person's accent is not difficult to understand at all and I don't need the subtitles. Considering the subjective nature, the person writing the subtitle is probably better off correcting such things to avoid any kind of ambiguity.
A Lot of times he says "Ma" wich mean "but" in italian , the subtitles actually help if english is not your main language , sometimes is hard to follow the speech.
kyzak I can understand relatively clear English. But to my ears, his voice is like hearing a person who is drunk and heavily slurring. I get the gist of it for the most part but I'm going "Huh?" every now and then.
Not English born speakers may apprecciate subtitles in order to understand complex passages or unusual words, and even English born speakers may find useful to comprehend English spoken with Italian accent. 😀😎

Yea the subtitle grammatically corrects what he says. You can just ignore it if you don't like reading that much.
Subtitles don't have to match, they should be easy to understand for the viewer, and in some cases shortened so that there's enough time to read them.
Cup Because that's not how subtitles work. Subtitles rarely match exactly what the speaker is saying. It's a whole science in itself.
