Great question! I’m growing heads of lettuce which need room for their core and leaves to grow. More than one plant per pot makes them compete for nutrients and limits their space to grow. If you’re interested in harvesting it as leaves when the plant isn’t fully grown (greens), you can plant more seeds and harvest as you go. This method doesn’t transplant well and will cost more for seeds, but it will get you lettuce sooner.
