Everything in this Ube Halo Halo Cake screams of Filipino. In this recipe, I tried to put together in one cake, the Filipino favorites - ube cake, leche flan and halo halo. Even the vibrant colors of the cake represent the vibrant personality of the Filipinos. This recipe is a bit complicated than the usual recipe because of the several components but it is definitely doable as long as you follow all the instructions. You will be rewarded with a cake worthy of praise by your family and friends. I hope this recipe will bring out the true Filipino in you!
Chef's Notes:
1. For this recipe, please take note that the leche flan layer should be baked in a baking pan about 1" smaller than the baking pan used for the cake because the leche flan is an "insert" in the cake.
2. Chill the leche flan before putting it on the cake layer. It would be easier for you to transfer it from the pan to the cake. Reduces the chances of breakage.
3. In case your leche flan breaks, do not despair - cut the leche flan into cubes and put it in between layers of the cake.
4. For the topping, there are many choices. Just think of the toppings of the halo halo - sweetened beans, langka, bananas, gulaman cubes, macapuno, kaong, nata de coco, sweet corn, ube haleya, leche flan, etc.

I use Bunge non-dairy whipping cream but you can use whatever brand that you are used to.

I used a 1M tip ma'am. You can also use a #22 but it is a bit smaller.
