This is what I do to help with the "long cooling period". I bake at the high temperature (250C) for half of the time and then I drop to 200 for the 2nd half. Like that I can more or less put my pastries right after I finish with the bread. The drawback is that I need to wait a bit if I have a second bread session to bake but not as long as the cooling.

We’re from Calgary Canada and not sure if our voltage is compatible with a home here. We run on 120v not 240v but maybe possible. I’m a contractor and wife is a IT but want to try our own baking business and u are helping! Glad everything working out for u.

First off, you are just lovely!!! Because of your videos, I have purchased a RM2020, and am now waiting for it to arrive in the USA! I am currently only able to bake 3 loaves at a time, so this will be a huge leap for my home business!
Hi Lily! Just made a yummy but not puffy poolish loaf. It is light and airy but it didn't puff over the pan, so it kinda counts as a success and also kind of a failure. Luckily, like I said it's delicious

Hi Lily, I too have a small micro bakery in southern Italy... I use a gas Zanussi, and need to expand, but not sure about the consumption costs for the electric ones can you give me some advice, thank you... At the moment I can bake 6 loaves at a time..., it bakes with convection really well, but gas is expensive
@@LilysLoaf Hi! One more question. Since it is a bread oven, but can obviously be used for more than just that.. At what temperature do you bake your cookies? And do you bake them on a steel pan or silicone sheet? I ask this, because in my home oven I bake my cookies at 185°C for 15minutes (one tray at a time). But im really considering buying this oven so that I could bake WAY more cookies faster.
Hi Lily, I have an RM2020 as well. It's been causing my electricity to trip about 15 min into baking each time. Have you experienced anything similar? Many thanks
@@PhilippeLeToquin I had an electrician to check the rcd box and everything is OK - the box is quite new. Campbell said it trips because there is to much moisture in the oven, but it's obvious there must be moisture when baking bread?

So the self timer is a separate device you have to buy separately to the oven - I got mine from an electrical store & hired a qualified electrician to wire in… v important to do so, but I’m sure Campbell will advise if and when you purchase the oven ☺️ hope that helps

What was the timer you put on your oven? So it flipped on at a certain time and preheated for you?
it's one that Campbell recommends when you purchase the oven! I can't remember the make of it so sorry!!

I have an RM2020 and have never had any issue with electricity. What fuse do you have in your fuse box? May be it is not big enough

yes but I use a self timer so it's programmed to switch on early at 2.30am, before I start work :)
