Why Stone Crab Claws Are So Expensive | So Expensive

  • Stone crab claws are one of the priciest seafoods you can buy. Depending on their size, claws can cost as much as $70 per pound. Unlike most other crustaceans, it's illegal to harvest the body of a stone crab, so fishermen must only collect the claws before returning the rest of the crab to the ocean. So what makes these claws so coveted? And why are they so expensive?

The bodies don’t taste good. However, if you throw the bodies in the water the crabs can grow back their claws, or other animals will eat the bodies. You people are over reacting, and if you think it’s unfair compare our brain sizes to the brain size of a crab. Ripping off both claws is stupid and fails the conservation goal anyway. 82% of them still die and become wasted possible food source.
Either catch the whole crab and find a way to eat the non claw parts so nothing is wasted, while catching less so they don't become overfished, or use aquafarming and breed them in captivity, or rip off just one of the claws so they have a better survival rate.

I've been running 10 traps recreationally in SW Florida for 3 years now. Stone crab trapping is a blast, plus the meals are incredible. I can't tell you how many crabs I've caught with no claws but it's lots of them. They're healthy as can be and went into my traps for the food, just like the crabs with claws. If both claws are legal, I don't hesitate to harvest them. My method of harvest ensures a clean break every time. I stick a knife blade into the soft tissue at the second elbow joint from the claw. When this is done, the crab actually breaks his own arm off at the body cleanly. I've been holding a crab before and he broke his arm off. This is a natural defense mechanism. When they fight, they go for each other's arms. If one can latch onto the soft connective tissue at one of the elbow joints, it's game over and the crab releases his arm and retreats. The crab that lost his claw or claws ckeanly can and will continue to live, eat and regenerate new claws.
Their pincher and crusher claw is not used for eating. They're used for fighting.
Another thing, you can look at the claw closely in one particular spot and see what looks like a fingerprint. If it is fully intact, it's the crab's original claw. If it is broken up with lines and dots, it's a replacement claw.
    Class dismissed... You're welcome.
