I think that's cuz, and excuse me if I'm butchering this explanation, there's a subset of different types of memories beyond long term and short term. In this case, the memories you make learning skills are stored in a different area of your brain than the memories you make that you associate your active lived experiences with. It's why a person with amnesia or some other types of memory loss can still speak their native language or drive a car or prepare food. The memories that formed learning those things aren't necessarily in the same part of the brain that tells them what their name is or where they come from or who they're friends and family are
