I have no idea about Taiwan's cuisine culture but due to the title of the video and the content of it, I can tell that people actually care about the food and enjoy it till late hours so they have night markets. Also, I think they appreciate the food and its service even though it is night. They respect both of them. Why I thought so is because I wouldn't wait for a minute there, because if I would go out for getting food at night I would buy and eat immediately. However, they enjoy the moment. This gives me a good vibe just by watching it. Caring about the food, service and the moment. Maybe it is a stereotypically or a traditional approach of theirs. Thanks for the video, Aden.

Taiwan is one of the unsung hero nations in this. Very few cases with a very low fatality rate. They locked down early and practised good health measures willingly without their government forcing them to do so.
