They go straight from the brine to the dry breading, the straight into the oil for 8-9 minutes at 350. 7-8 minutes at 400 but you can't do 400 without peanut oil. Vegetable oil burns past 375.

I had some Vietnamese friends on the Texas coast when I live there in the early 2000's they called that second recipe Vietnamese pizza . But they didn't have liver in it lots of bean sprouts though..
There used to be a time when the only season you needed was just salt & pepper..... But now there's a lot of overkill that tends to reduce the beautiful light golden brown color.
