2 suggestions. 1. use a ring pan more commonly used for angle food cake. That way all of the batter is exposed to the heat more evenly 2. separate eggs and whip the whites to firm peaks and mix into the dry ingredients. This will keep the batter more aerated

I made a lemon cake you did a few weeks ago. However when I put it in the oven I remembered I had forgotten to put the cottage cheese in it. That cake was absolutely delicious so I decided to make it again and this time I remembered to use the cottage cheese and I didn't like the end result half as much. I am not a big sweet eater but I have a daughter who has a real sweet tooth and because I try to help her on her health journey I like to make keto cakes for her. I totally agree with letting the cake mix stand to absorb I get a much better result when I let the mix stand for at least an hour.
I have been using Lupin flour less calories,less carbs and it works just as well. Love coffee cake with faux apple inside. Because I use Lupin and pea protein powder there is a fair about of protein in it. Thank you!
Lol, you girls are so funny. I think the "crumble topping" should go on in maybe last 10 minutes so it doesn't soak down into cake?? And it will brown and get crunchy? ☕

Omg, I could be a triplet. I'm 5 1/2 yrs on keto, and...have the same hair issue as Emily, except it hangs right over my right eye, lol. Try making your crumble with brown swerve for a more authentic coffee cake taste, and maybe reduce the butter? That may be why it 'disappeared '....it just melted into the cake. Looks yummy 😋
I never get crumble to work out in keto recipes. I think it's the sweeteners (and I've tried them all!) because of the way they melt differently than real sugar. If anyone has had any luck with getting crumble to actually stay crumble let me know!

☕ I think it looks delicious. As everything seemed to sink to the bottom, you could have turned it up side down when you took it out of the pan. 😊
Since the crumble fell to the bottom I would just make it like an upside down cake

Perhaps the cinnamon swirl may have been better without the butter. The cake batter and crumble topping already have plenty of moistening ingredients.
