Take inspiration and ideas from Gingium, get a couch in there, fold out bed maybe. Use the space underneath the stairs for tool chests, storage and parts shelves etc. It'd be a waste of space to block it off I reckon.
In the Netherlands and Germany we like to modify our cars to the umpteen degree, so, it's not just Japan or the USA. We very much have a car tuning and modification culture over here,....thought it was similar in the UK but apparently not, learned something new today. Anyway - Great new space m8, can't wait to see it finished and see the cars 👍.

For the accent colour, I'd go for the purple. It's a nice deep colour that will add contrast, but won't be too flashy at the same time.
