    DRY FRUITS ICE CREAM
    Dry Fruits Ice Cream
    Preparation time 5 minutes
    Cooking time 10-15 minutes
    Freezing time: 6-7 hours
    Serving 4
    Ingredients
    For Condensed Milk
    1 cup Milk, दूध
    1 cup Sugar, चीनी
    2 cups Milk powder, मिल्क पाउडर
    A pinch of baking soda, बेकिंग सोडा
    For Dry Fruit Ice Cream
    7-8 Almonds, chopped, बादाम
    7-8 Cashewnut, chopped, काजू
    8-10 Raisins, chopped, किशमिश
    A pinch of salt, नमक
    Other Ingredients
    1 cup Whipping cream, विपिग क्रीम
    3 cups whipping cream (unwhipped )विपिग क्रीम
    Or
    2 cups Condensed milk, तैयार किया हुआ कंडेन्स्ट मिल्क
    6 cups Whipped cream, विप्ड क्रीम
    For Garnish
    Chocolate syrup, चॉकलेट सिरप
    Rose syrup, रोज सिरप
    Parle G biscuit, crushed, पारले जी बिस्कुट
    fresh Mint leaves, पुदीना पता
    Process
    For Condensed Milk
    In a sauce pot, add milk, sugar and mix it well. Cook on medium flame for 5 minutes.
    In a bowl mix milk powder, baking soda and then transfer this mixture into the sauce pot.
    Keep stirring continuously on medium flame. The mixture will start to thicken slightly.
    After 3 minutes, the mixture will turn into a frothy and silky smooth texture.
    Now turn off the flame and let it cool completely. make sure to turn off the flame when the mixture is slightly Thin. as it thickens once cooled completely.
    For Dry Fruit Ice Cream
    In a pan, add almonds, cashew nuts and a pinch of salt slightly roast on medium flame.
    Take chilled whipping cream in a bowl, whisk it nicely for about 10 mins or until soft picks.
    In a large bowl, mixed prepared condensed milk and whipped cream together mix it well.
    Now, add chopped dry fruits and mix it properly then transfer it to a container and freeze it for 4-6 hrs or until it sets.
    In a serving bowl, scoop it with a scooper and garnished with chocolate syrup, rose syrup, crushed parle g and fresh mint leaves.
    Serve chilled.

    You made me love cooking like for real. I used to be so scared all the time while cooking because I used to think that I'll mess everything up and nobody will eat it.     Wow, home made condensed milk! Will definitely try it. I normally use gms & cmc powder to make the ice cream, but making it chemical free, double bonus. Thanks a lot.

    Thank you Ranveer ji. I did as you taught in the video. 1st time, I might have put more condensed milk, so it was thick at the bottom but watery on top. 2nd time, I corrected the ratios and mix whipped cream & condensed milk in a mixer. It came out very well. I used butterscotch essence and used nuts & jaggery, instead of sugar, as caramelized topping.
    Thanks again for your beautiful tutorial.

    You are the only one I have seen so far who "explains". Why to use an ingredient, what is its job in the recipe and so on. I really really love it. Following others' recipe is mostly like cooking without understanding the science hidden in cooking.

    Chef Ranveer! Thank you for the recipe 🙂. I love that you get into the science of cooking. I have a sort of nerdie question to ask you. Hope you'll find the time to answer.
    I've just made some chocolate ganache from good quality cacao powder, butter and milk and sugar. Heated together till it came to a nice thick ganache like consistency. I made some whipped cream from Amul low fat cream. Then mixed the ganache into the whipped cream. The taste is amazing. Smooth and light. Will this make a good "icecream" if frozen? Or is there too much water content to form an ice cream? Thank you!

    दादा भाई आइस क्रीम खाते खाते बोलने का मजा अलग ही है दादा भाई.....
    कई बार अपना खाने का मन है और ममी बुला रही होती है तो जल्दी जल्दी खाकर जाना होता है तो ममी के पास जाकर यही हालत होती है मुह में ice cream और बोलना भी जरूरी... 😂😂😂😂😂
    तब घर वाले डांटना शुरू होते है....
    कमीने आदमी है या भूख😢😢😢 रुक नही सकता 2 मिनट....
