One more important factor in the accuracy of the OCR is the quality of the software. In my experience, Google's Cloud Vision API for example gives 99% accuracy where your common freeware linux app gives about 70%.
Yup definitely true, a very important consideration. It also depends on what the model was trained on. Not all computer vision and OCR technologies are good at the same things.

Guide dogs aren’t for everyone. Who knew, that in order to be a good dog owner, you actually have to like dogs! I’ve got autism, and pretty much everything about dogs, the way they smell, the way they lick you everywhere, just the overly social behavior, it all triggers my sensory issues so much! So no, grandma, I won’t get a guide dog. That wouldn’t be fair to me, or to the dog
Hah what a way to put it! I actually never thought about the sensory aspect of owning a dog, I definitely can see how that might be off-putting to someone who cannot take all the sensations. At the end of the day, I just find it weird how pushy some people are with me getting a guide dog, but I can also appreciate their enthusiasm. It's a deeply personal choice that's more complicated than some people realise, but I guess that's why I'm trying to make these videos to help educate more people!
