I am a newb cook so alot of the high order details are lost on me (pleasant to watch and see) ..but the parmesan fondant and crisp is well within reach, thanks chef!
Some of the stuff in the video does not make sense, like cooking the steak like that, using clarified butter, etc. But video qualitz is insane (even if this time it looks more like a tortellini ad on tv than a cooking video)
Besides the eggs, the pork is the only raw ingredient..it needs to be cooked. That way you don’t depend on having to boil the crap out of them to be done, they’re done when the pasta is done..
The thing on your thumbnail is not a tortellino. A tortellino is folded first on the x-axis then on the z-axis. Yours is folded on x and y axis. The point of the tortellino must be on the same plane as the loop, and not parallel to the loop axis.
