No salt for sweet butter for pastry use. I use a hand mixer at medium speed. Beat it until it becomes yellowish…..butter, firm. When you beat heavy cream without salt it becomes whipped cream for dessert topping, if you continue to beat it, it becomes butter. Use a spatula to scrap from bowl and form it to the shape you want. I put it in a bowl, cover and refrigerate. Some form it into a stick or just a ball on a plate. Using a hand mixer is so much easier. The old fashioned way of putting the cream in a jar and shaking it is very hard to do…..not for the weak……
