As an American I love these videos because they show a form of cooking that differs a lot from the traditional european and central american styles that we mostly see here. Many things that are common in Chinese cooking would never be considered in western kitchens. Thank you to chef Wang for providing english subtitles and educating us about dishes and techniques that aren't common around the world. I'd also like to say that I ran a lot of the comments on this video through google translate, and while most of them were clearly not good translations, It's awesome that you can get general ideas and connotations from people that have very different cultures than you. If any people here speak mandarin (I think that's what chef wang speaks) and english I'm curious about something. Chef wang refers to the older man as "Uncle" in the english subtitles. Multiple comments when translated through google refer to him as 4th, or another number, and then uncle. I'm curious if this is a mistranslation or if there (likely) is an aspect of Mandarin that I'm not familiar with. If you can answer this thank you! If not no worries and I'm glad we can share this love of cooking across cultural boundaries. :)
‘ 四伯爷(si bo ye)’ means 4th uncle, which is the 4th older brother of chef Wang's father. Chinese people often use a number ahead of 'uncle' to distinguish different family members. We call father's brother '伯bo', and mother's brother '舅jiu', both of them can be translated into 'uncle'
arh, well in english is uncle, auntie, cousins for everyone on all sides of family. but in chinese we have on maternal side: cousins male cousins: 表哥(biao ge)
今天和徒弟们一起做一道创新版的火焰醉鹅,此菜源于广东地区属于粤菜,其中用到的四种酱分别为海鲜酱,南乳,腐乳,芝麻酱,其成品鲜香酒香十分浓郁。由于四伯更加喜欢四川风味,所以还加了花椒,豆瓣酱等,味道也非常不错。
