Moroccan Style Lamb Ribs With Chilli Mint Chimichurri

    In this video i'm going to show you how to make Moroccan style lamb ribs with a chilli mint chimichurri!

    Here's the recipe for the rub I made in the video:
    - 3tsp ground coriander seed
    - 3tsp ground cumin
    - 3tsp paprika
    - 1.5tsp tumeric
    - 1/4tsp cinnamon
    - 1/4 tsp ground ginger
    - 2tsp Garlic Goals (or use garlic salt)
    - 2tsp cracked black pepper
    - 2tsp kosher salt (i'd actually go 3 next time)
    The lamb ribs were trimmed, seasoned and smoked at around 150c/300F over cherry wood for almost 2 hours. Then wrapped up in foil with butter until probing tender.
    Here's the chilli mint chimichurri recipe:
    - 1/4 cup of finely chopped parsley
    - 1tsp finely chopped mint
    - 1/2 a red chilli finely chopped
    - 4 cloves of garlic finely diced
    - Juice of 1/2 a lemon
    - Pinch of salt and pepper
    - 1tsp chilli oil
    - 1/4 cup olive oil
    - 2 tablespoons red wine vinegar
    Honestly, these lamb ribs were so good, definitely add Moroccan style lamb ribs to your list of things to try!

      Never seen this as a moroccan. But our cuisine is very diverse from region to region.

    top job knackers, it's always been a mission to see what can be done with lamb ribs, you should do a rabbit or venison hind quarter some time

    We had this tonight and it was the best smoker meal I've had in my life haha! Lamb ribs weren't really cheap, need to shop around more but 11 out of 10 for luscious, smokey, spicy flavour!

    Hey mate, I’ve received your run bundle smells amazing, I grilled up some chicken thighs with honey soy on 1 side and garlic goals on the other and omg delicious!!! Family loved it!!

    Oh shiite, those look so good, and loving that rub and the sauce. The 1st time I cooked them, I had no idea what I was doing (it was labelled "lamb breast"). Just did s&p & paprika in a low oven for about 6 hours (I fell asleep for a bit). They were fantastic after i broiled the top for a few.

    Great vid mate. Love the channel! Hey got tip for you (you’re probably aware anyhow) When you trimmed the fat you also trimmed the selvage. It’s the thin muscle membrane outside the outside fat. It’s the most delicious substance on earth. It’s what gives the fat on loin chops the crunch. Try seasoning and grilling on high heat as a meat side. I also use it to wrap poppers instead of bacon.

    Lamb ribs is not cheap in Norway, what can i do with that top layer of fat? Can i make a lamb tallow? anything else? wish they sold it without that top layer fat

    Lamb is good, very good, but what is difficult to find is goat recipe. I only know how to do goat three different ways. Im sure there are more. Goat is better than lamb.
