You don’t need the baking soda, the best potatoes to use are either russets or Yukon gold. I don’t peel them. More crunch with the skins. Roast at 425 about 45 minutes. Mangia!

Just own it. Andrew Rae from Babyish is the prime example. Massive YTer, but always gives props to Chef John and Kenji when he uses their ideas.
Little red potatoes cut in quarters work great for this. Put them in bowl and put a little olive oil and whatever spices you like. Let 'em roast! Boy, are they good!!!!
I do exactly this, but I do partially pre-cook the cut potatoes by either steaming or par-boiling. Also, if you get smaller (golf ballish) spuds, you can fork, steam, toss in oil, seasonings of choice, smash into disc's and roast or air-fry. I save the "dirty" bowl I originally tossed them in, and throw them back in for a light toss and dust of parmesan after cooking. YUM!

I imagine any type of potato you like but those look like golds and most things are baked at 3:50 I'm sure you can adjust the oven and it's not really three straps it's and she didn't mention the garlic and I saw no lemon she parboiled and some baking soda I imagine just a couple teaspoons Lindsay mixed oregano olive oil and I know I saw chopped garlic then she tossed them hard to break down the outside so that they would be extra crispy literally so simple
As a Brit, I know how to make crunchy roast potatoes. This is all good bar the baking soda - Nooooo! Just use salt and the right potatoes. In the UK, King Edward’s and Maris Piper are good floury potato options. Don’t use salad potatoes - ie waxy - it’s got to be floury fluffy ones and you parboil 10 mins in salted water then drain and bash around the pan then pour into a roasting pan with HOT oil or fat. Olive for health but duck, goose or beef dripping for taste.
She says to toss the spuds aggressively BEFORE roasting to give them extra crispness. Pause the video at the exact time she’s “aggressively” tossing, and notice the potatoes are already roasted!!!

I do something similar but use olive oil, garlic parmesan and coarse ground pepper and I usually use baby red potatoes
