Mhee Ko-rat is the food from northeast of Thailand but Pad-thai from central of Thailand. Pad-thai is 3 taste in the 1 then sweet, sour and salty which Mhee Ko-rat is salty more than any tasty.
My grandmother used x number of dinner plates to measure out flour when she made bread. I can still see my mother trying to trsnslate that into cups ! Guess plates were faster ? Whatever the reason , her bread was killer good !

I was stationed at Khorat RTAfb in 1974. I had a bungalow downtown near the SP Hotel and I used to eat at a restaurant across the street where the owner served wonderful Quiteal Nam soup, moo, and incredible Khow Paht. I look back on that time as a wonderful time in my life
I cheated a little bit and used a pad thai sauce but I add more soy sauce and soy bean paste because I made a bigger portion size. I also added shredded carrots, water chestnuts, and rainbow chard. It turned out pretty good. Looking for more inspiration.!

fox fox No, it’s not. Pad see eiw (or thin soya sauce noodles) would not have any dark soya sauce in it. This one her mom cooked is a kind of Pad Thai. It’s also called Mee Korat which is North eastern Thai style. It’s not like typical Pad Thai as you can see from the ingredients are very simple compared to Pad Thai. Pad see eiw always comes with thicker rice noodles and absolutely no spring onion in it, just Chinese broccoli.
Love this recipe. Made me some pad thai tonight. So fast and easy to make. I did have to make a run to China town to buy some Thai black soy sauce. Worth the trip. I tried other recipe which uses pickled radish, tamarind paste, dried shrimp. I am sticking with Pepper's Korat style pad thai. Thanks ladies and keep cooking.

The way she cooked is more Pad See Ew to me. Pad Thai would have tamarine sauce, fish sauce and palm sugar. We don’t put chinese broccoli but chives in there.
Pad see ew is so easy just buy soy sauce, dark sweet soy sauce, oyster sauce then stir the noodle with meat and vegetable(Thai Kale) or else you prefer. FINISH.. 😁For Thai we add fish sauce,sugar,vinegar and chilli powder for seasoning on each our own plate
This is Phad-See-Ew. “See-Ew” mean the black thick soy sauce she put it in pan, so just follow the step in this clip. I would say that this is not the Phad-Thai at all. It should be called “Phad-See-Ew”

Love your video as always. Normally we don’t really measure ingredients to make Thai dishes. Because we use a lot of fresh ingredients like chili, lime, coconut juice even soy/fish sauce, they all taste vary depending on the time of year the got harvested. It’s more of knowing the taste and the ingredients in it. The taste will be adjusted to that family’s liking. My husband always tell me to measure water when I cook jasmine rice and I can just use my feelings (not even the finger method). And it comes out perfect every time. 😊

For the soy sauce brand she had - they have both sweet soy sauce and dark soy sauce. Very tricky but I find it's best to have both in the pantry :)
