I made this last night. Is your grandmother the secret creator of butterfingers!? It's delicious and it's legit like eating the inside of a butterfinger but with nuts.
So I just learned this and thought I would share - If using raw peanuts add them at the beginning, so they cook along with the sugar mixture. If fact, by doing so, you'll flavor the sugar mixture, giving everything a nice peanut flavor. If you are not using raw peanuts, then add them when the mixture is at 240 degrees. You then proceed as normal with the recipe. Hope that helps, 😊

(My) Gram’s peanut brittle is the best, although I am 😊sure yours is very, very close! 😉 similar but no butter or vanilla or thermometer 🌡️ actually…cook til mixture spins a thread …I have had a few flops so I am sure yours is much more consistent! She made great fudge too, especially the peanut butter, but I never learned how to make it! Aren’t Iowa Grandmas the best?!

I like the asian version of peanut brittle: just hugely up the percentage of peanuts to sugar and skip the horrible baking soda. Skinned peanuts are best and some of the peanut oil softly crisps the sugar brittle along with the butter. Add sesame seed if you like. Cut while warm into peanut bars stuck together with caramelized sugar (and butter).
What is an alternative nut to use? My son is allergic to peanuts and wants to try brittle. Will it be good with macadamia? I feel like almond is over used as a substitute.
In india we make something similar to this. We call it CHIKKI we use jaggery instead of sugar and corn syrup which is a healthier alternative compared to sugar.
Oh yeah! I'm trying this. I make toffee every year, so much every year that I'm at the point of almost hating it. lol. Time for something new. Thanks. 👍

I've never heard of airy peanut brittle and its genius! Its so much gentler on your teeth when munching on it it, but still crunchy 😋 delicious!

My great aunt would not share her recipe, but her peanut brittle was stretched so it was thin, not thick pieces. The best!

You should compare this to "Peanut Chikki" - a peanut brittle snack in India, using Jaggery instead of sugar, and Liquid glucose
