in Elvis Presley's case he was such a legend that every songwriter of his generation did their best to get a song into his hands. It was a sure fire thing that Elvis would turn your song into gold. There are of course the popular Elvis hits that everyone knows but there is a mountain of other lesser known songs that are all gems and I'm glad you're exploring those. And you're right that he was a consummate balladeer. In fact the more I've listened to Elvis over 60 years the more I think his slow songs are his best work IMHO.

Elvis had song writer's that wrote for him and of course he would make changes if he felt something worked better for him. For the most part, Elvis was his own Producer and Arranger.
