Okay, thankfully you switched part-way through the video from top-down orientation to shaving in a bottom-up orientation. This is is a MUCH better slicing experience. (Top-down just doesn't do anything, but with bottom-up, you are literally shaving the baking soda falling over the blade and it falls in such a pleasing way.) I think that is why your earlier baking soda shaving video is SO successful!
