Replace the plastic nut with a bronze ring nut. Amel will tell you what fits if they don't have them in stock. Is the rudder shaft perfectly smooth as it has to be? The rudder stock will move a lot while sailing due to the side loading. Does the rudder float? If so you won't need to worry about dropping it while changing or adding packing. If it doesn't float you should keep the steering bars bolted on tight. The main problem is the plastic ring nut, they were one of those good ideas that don't work in real world conditions.
If you go back a few vlogs, it also appears that a lot of the hoses around your engine are old and discoloured and appear quite brittle. You should be replacing a lot of your hoses. Preventive maintenance is key to a happy sailing life.
I always use a rubber-canvas heavy duty universal coupling. No matter how accurately one imagines one has aligned it--there will always be some vibration as mounts soften and things settle in. The canvas universal (or something similarly strong and flexible) takes up very little space and sorts out that problem.
Great to see the rudder stem gland leak is now stopped. Your sea trials will test if it works in actual sailing conditions (fingers crossed). Is it possible for you to have a new packing nut made in a suitable metal material before you leave? I would certainly recommend this so that you have all avenues covered. Test that it fits before you leave and keep it as a spare. Looking forward to the first engine run-up. Again make sure you put it and the boat throw its paces inshore and ensure you are thoroughly happy with its functionality before leaving. Good luck to you all.

Order a new nylon nut which will have beefed threads. Better yet have a machine shop make one out of bronze. The bronze one will allow you to tighten it much more than the nylon one. In either case you should have a spare and extra packing. Isn’t the packing supposed to be more impregnated with wax?
Great job , but I didn't see the mechanics use any oil while rebuilding the camshaft and new bearings, , a sure way to ruin new bearings as engine has to turn a few times to get oil pressure up !!!???

Sorry mate...but that coupling is too loose now. It should be a relatively tight fit. I assume it has a key in a keyway and grub screws to fix? The grub screws will force the coupling to one side causing it to run slightly eccentric. Probably not a major, but you might wsnt to get a new one when you can.

Move your rudder a couple of times a day to see how it seals, and a stuffing box gasket always leaks a little bit

Get your fitter to turn up a new nut with a tapered thread . Hopefully nut wont jump. Might take a couple of trial fittings.
