I love 'em both...fixed different ways. I am also a pretty fair fish chef and have a lot of original recipes. The main thing to remember is the characteristics of the fish flesh. Perch are light, white and cook quickly. Cats are a bit coarser and oiler. They take longer on the heat to make them at their best.
Most fish get more active as the water begins to cool in late summer or early fall. But these higher elevation ponds in Utah seldom get much above 70. That sends the trout deeper but perch and other species like it just fine. Right now they are pretty active and feeding on all the young of the year perch. Wherever I was able to see those clouds of baby perch I could find bigger perch feeding on them.
