    Great video! I have a kombucha continuous brewer that I love because it makes it easy to have as much or as little undergoing secondary fermentation in swing top bottles. There is a lot of ginger root in my fridge currently so I think I'll get started with the ginger drink. We are a whole food plant based household so I think I'll start straining my homemade soy yogurt to collect the whey! I anticipate good results, but fingers crossed!

      This is the first I've heard of continuous brew kombucha, amazing! Next time I get a scoby I want to try that out. Thanks for sharing :)

    Can one use organic jaggery to replace sugar?

      The Nourishing Traditions book calls for rapadura in their recipes, which is unrefined cane sugar (same as panela and sucanat). From what I understand, jaggery is the same thing, but it sometimes made with palm sap. So if your jaggery is made from sugar cane it's the same. Either way I think it will work!
