I believe why the meat is still pink(assuming that its fully cooked) is because It's myglobin, which is just a type of protein. It's perfectly safe to eat. In fact, it's actually really delicious and full of meaty flavor.
Myoglobin is bright red, it’s the “blood” you see in raw meat sometimes, its the muscle that can take on loads of oxygen so you see lots of it in ducks wings etc

Where I used to work we cooked Boston Sausage. Pink inside but definitely cooked with an internal reading of ~100 C
