    Coincidentally I struggled with wet splits during a rib cook just yesterday. Had to dump some more lit briquettes in and use smaller splits until the ones I had on my firebox dried out. Since seasonings are so muted over time on the pit one way to use a rub to its full potential is to wait later in the cook before using. My best pork back ribs so far have been smear of olive oil and a little kosher right before going on the pit. Few hrs in when they look right I pull each rack off and onto a sheet of 12” HD foil where they get a good dusting of my rub which for now is Chris Lilly’s Memphis Dry rib rub recipe from his Big Bob Gibsons BBQ cookbook. Then I just push and fold the foil up around them aka foil boat until tender. Your experience with the short racks is another reason it’s hard to beat a toothpick for testing ribs. TN style dry ribs is to mop or moisten when pulling off pit and hit with another dusting of the rub. Yep, my best ribs have absolutely no glaze at all. Give it a try. Nothing dry about em if you know how to pick good ribs and cook em right.

      This sounds like a great method for cooking ribs! I’ll definitely have to try it out! Seems like it maximizes flavor and minimizes any over cooking. I have done a Memphis baby back rib video and did a similar method. Salt, smoke, then hit with a finishing rub. Some of the best ribs I’ve ever made

    All of these rubs are fantastic! I've used them on steaks, chickens, pork chops, ribs recently. I will definitely be purchasing more. Great cook bro! I really like your smoker! How did you keep that beer from exploding after sitting on that magical trivet made from precious metals from the planet that unicorns come from? Thats magic alone right there brother! LOL

      I’m glad others are attesting to the greatness of these rubs! They are all so versatile and that is one of the best things about them. I will definitely be purchasing more too. That FatStack is a great smoker. Just an unfortunate end to a company. Hahaha I hacked my magical trivet to make things super cold instead of hot, so it kept my beer nice and frosty ☃️

      @@harrythehorsebbq the rubs are awesome snake bite is my favorite but don’t forget about nice and plump sausage starter, made a batch using it this weekend with some extra pepper for hot links and they came out amazing.

      I definitely didn’t forget about the sausage starter mix, but thanks for the reminder! I’ll be dropping a video reviewing that and making my first batch of homemade sausage probably sometime in January so keep an eye out!

      @@harrythehorsebbq I just started making sausage, i have done a few batches so far, the nice and plump was definitely the easiest and quickest. I will say once you get started it’s hard to stop.

    Ribs look great! I had the same problem with wet wood this weekend had to end up preheating inside the firebox once I got a decent fire/coal bed going…after that was smooth sailing….

      Thank you! Good to know I’m not the only one struggling with wet wood haha. I was preheating my logs inside of the firebox during this cook as well, and it wasn’t helping too much haha. But I agree, a well established coal bed helped me quite a bit

    The exact reason I abandoned porter road. I was so pissed when I had ordered a bunch of racks for a party and then was sent half racks. Haven't used them since.

      It’s definitely unfortunate that we are having some experiences that are leaving us disappointed. But, we are definitely paying for quality though so keep that in mind. Also, every other product I’ve purchased from them has been great. The ribs have just been a little lackluster

      @@harrythehorsebbq my local Sam's has some incredible spares. It is nice going in person and picking out the best. Porter road had all my trust until they did that with the ribs. I get things are more expensive. But I would've rather paid more for the rack then them keep the price it was and send this stuff out

      I hear you, it’s tough when we’re trusting an online butcher company and don’t get to see the product until after we pay. Depending on what I’m trying to cook, I usually go to my local butcher or grocery store first to see what’s available. Local stores will still have great stuff

      OG chud rub is the most versatile and flavorful for sure. I put it on meat and veg all the time. SPG is great too. Gonna do a brisket vid with that rub. How’s that new smoker treating you??

    Hey Harry, great vid, I had that same issue, I would watch a few youtubers buy meat from porter road and I usually hop right on PR site and place the same order and get something that is cut oddly or the portion is way small but to do that to a sparerib is ridiculous!

      Great to hear I’m not alone on this! All the beef and turkey I have purchased from porter road has been amazing, but I have had two instances with ribs that weren’t the best. I appreciate the high quality of the pork and other cuts, but I wasn’t expecting the ribs to be almost half racks and cut so close to the bone. Taste, flavor, tenderness and texture were spot on though

    I love the Chuds products and it was a great video but those ribs are not worth the price porter road wants for them. Bet they were still tasting great. Great video!

      Much appreciated! I am in total agreement. The chud rubs may be my favorite of the rubs I’ve tried. Goldees is up there too. I paid quite a bit for those racks and I’m always pleased with the quality. That’s never a question. The size was underwhelming though. They were definitely tasting amazing for sure though!

      I think we are all very used to commodity style ribs for bbq. I am happy to support them because I know the quality is top notch. I never have to worry about that. Their beef is also great quality. We all want thicker ribs, but we also have to understand that they are working with animals that have been raised differently

      I just want to showcase my true experiences with all the variables that go into bbq. The quality is OUTSTANDING, but I wasn’t too pleased with this purchase overall. However, flavor, tenderness, and texture were all on point 🤙🏻 all my other cooks using meat from porter road have been great though
