For the 3D flyover trail maps...I use free version of Google Earth. For the actual trails shown, I find the trail I am going on from other hikers using their GPS file and convert it to a *kmz file, then upload to Google Earth. As for the recording, I just use streaming screen saver software. For windows there are several, including VLC. But I have found that recording your screen on a PC is chopping with any free software. I now use Quicktime on a MAC for best quality. Good luck, hope you can create some creative content as well.
