HI. I see that you are still using aluminum foil. I did see the juices from your roast swimming around with the foil. This is a bad idea. A great cook like you should recognize this and eliminate using aluminum completely
Putting the meat on grates and then adding the oil is wasting oil. Also, the top steaks didn't really get marinated 😅 Also odd is to make a chicken stock, then adding that to beef? Seems overly convoluted

Not nonstick, stainless steel. If you preheat the pan and prime it with butter before cooking in oil then most foods won't stick.
