    This man got me thru raising 2 girls. We used to watch the videos together, then all cook the recipes together. You have no idea how much influence you've had Chef. My girls are grown now and doing their own thing, but we still share Chef John's recipes together. A few of our favorite recipes have come from this channel. Salute to you Chef John!

    i just wanted to take a moment to say that chef john has the most comforting voice/show ever and as someone who has severe anxiety and PTSD he's helped me more than he knows. this man is a great personality, a master of wit, has a great sense of humor
    and has calmed me and allowed me to bypass insomnia countless times. if it were up to me he would receive a nobel prize.

    Chef John, I started watching your TH-cam videos around 2012 when I was a wee lass in university!! You taught us the steps but most importantly you taught us how to cook - using our senses and judgment. Your rhyming "you are the ____ of your _____" may be a meme but it really instilled creativity and ownership in my cooking. I owe a lot of my passion to you. Moving into my own house in 4 days and already dreaming of feasts to make in that space !!

    When I'm making minestrone I like to put in tiny little meatballs. About a half to two thirds of a pound of beef and pork mix, a beaten egg, some Italian seasonings including too much basil, and enough breadcrumbs. I use my usual icecream scoop I bought specifically for meatballs and cut them into quarters before rolling them into balls and browning them while the pasta's cooking.

    Chef John, my grandmother taught me to cook the pasta separate and add to soup when ready to serve. That way the pasta keeps it's consistency and doesn't soak up, in case you don't serve it all in the same day. Just my two cents. Love your channel btw.

      Another reason for that is to keep broths clearer, when applicable. Boiling the noodles in the broth makes it cloudy and starchy. Having said all that, I've cooked the noodles in the soup before out of laziness or illness and it's not terrible.

    I went to a local restaurant a few days ago, ordered French onion soup with my sandwich. I was SO disappointed. For some reason, they think it's ok to put a handful of RAW red onions into the soup before serving. I normally love French onion soup, but not this time. I will be making Chef John's version soon.

      I run into restaurants using whole wheat or "artisan" bread to top French onion soup and skimp on the cheese.
      Ugh.
      Cross that establishment off my list of acceptable places to dine out.

    I actually made a pot of soup the day this came out. Russian cabbage soup. I was in the mood and it was sooo good! The last of the fresh dill from the garden and a little sour cream. It was warm and wonderful.

    Chef i wanted just to rectified something about the Appellation : Soup ( in France ! )
    Soup means , a dish made from many ways ( there isn't any Rule to respect to cook it ), so Many Variances may exist !
    When the Recipe is respected they are Called : Potage ( there the recipe must be follow and respected ! )
    Voila just some infos i wanted to share ( as i am also a Chef in life ).

      No, it's your food, you must prepare it to your liking, always. If the recipe does not suit your palette, alter the recipe.

    I want to thank you for the wonderful onion soup recipe.
    I had a bunch of onions laying around and didn't know what to do with them until i watched this video and made exactly as you showed.... almost...
    Well i didnt have "french bread" but sinced this was Americanized i substituted for California sourdough bread.
    It worked but it needed something...
    I also didn't have oven proof bowls...
    So i used a propane torch to melt the cheese
    But it still wasnt quite right...
    Then i was "Ha!" I dont have the Monterey Jack
    Well I didn't...
    But I did have a bottle of Jack Daniels and boy did THAT smooth everything out..
    So yeah, thats some damn fine American onion soup you've got and i whole heartly support making some more.

    I've never heard of or seen cranberry beans before. Those are lovely. Their almost to pretty to cook. Thank you so much for helping me expand my culinary courage and curiosity. I've made a very tidy sum of your recipes and have not had a single complaint yet. If I complain about anything at all its because some of the items in your recipes are hard to obtain. The closest whole foods is 120 miles away in Boise Idaho. However I've been able to improvise when I have no other options. Keep up the great work. 🤗🤗

    I just made his Calo Verde soup (kale+potatos+sausage), another great cool weather choice.

      Caldo Verde. Traditional Portuguese pottage/ soup.
      There is also a Brazilian Version made with cornmeal : Maneco com Jaleco (meaning Manny with a Coat).
      Basically cornemeal, broth, kale and smoked sausages. Or even make it vegan, without the sausages .

    A version that Ina Garten made many years ago included a pinch of cinnamon and I always include it in my onion soup.

    I have made the tomato bisque sooo many times over the years. It’s so simple and so good! One of my favourite recipes for sure. I usually use a bell pepper instead of celery because once I didn’t have celery and it was good so I kept it.

    For the tomato bisque soup, skip the grilled cheese and go with a peanut butter sandwich for dunking. No matter how you think this sounds, you really must try it. I've been eating tomato soup this way since childhood (more than half a century of experience 😄) and can never get enough.

      If I still have to-go cup from morning or early afternoon work coffee by the time I get home I rinse it and the cover - for next time I have a little overage from making soup or stew and go for a walk with it. Usually to the grocery store

    Wow great soups can’t wait to try them to help ward off the western New York winter. There is nothing like coming inside the house from minus 0 degree cold with all the wind driven snow to a hot bowl of soup. I will happily try all these recipes. Thanks

    My husband just got told in the hospital that he MUST go low salt (max 1000 mg per meal+snack). I’m a so-so cook and this is just throwing me for a loop. Would appreciate any recipe videos or recommendations to help me over this hurdle. So appreciate your videos and have actually successfully served many of your dishes!
