I buy buk choi from time to time (nice texture and colour, but no flavour), and in my pantry are both light and dark soy sauce. Bitter gourd or melon is also available in the local supermarket but I’ve never eaten it. Note that we use the term Chinese cabbage to refer to napa cabbage or bai cai, not to buk choi.
Bak Choi: chinese meaning is White Cabbage. "Bak" means white, "Choi" means Cabbage. This pronunciation was from Cantonese.
While traveling across Vietnam I saw and ate lotus roots everywhere. Also they sell lotus seeds in supermarkets to be eaten as we eat nuts :)

Oh, so turns out bitter gourd is a real thing elsewhere too, interesting, I should try it next time in China:)
