WWDT for the bloom with V60 works well for me. Haven't torn the paper yet. I move it in a circular motion parallel to the walls of the V60.
I did try it several times and it went ok but dangit, I got kind of in a rush one time and did end up poking a hole in it. I do like using a chopstick does work well for me even in a rush haha

I am super big into handmade ceramic cups. I generally do not like unglazed rims but it depends so much on the texture of the clay. some clay is very coarse and literally feels like sand paper when it is fired. Some of those some how became popular in Los Angeles as unglazed/sparsely coffee cups and I could not understand why

Appreciate the information on your cleaning schedule, rational for when etc. I use treated water to control scale build up & cut down on chemical use. My machine does have a when to clean notice which I set to 30 which is about 2 weeks for me. Agree that watching when the subject is out of your price range is useful. Eventually the innovations on high end machines will migrate down to more reasonable units. In the 70s NASA contributed to the development of pacemakers, does not mean you have to buy a Saturn V.
Big fan of Leuchtfeuer, probably the No. 1 roasters for Panama Geishas. Leuchtfeuer translates to beacon or navigational light. They're from Hamburg

There is really NO real waste in water filtering. It goes back into the sewer, and some eveporates, or comes back as rain. 1st law. Matter is neither created nor destroyed.
Completely agree in the LM point. What they do they do so well; super consistent and super high quality machines that last forever, look and feel amazing and offer a relatively basic level of function compared to “nerdier” machines. To me, that draw is what brought me to the linea micra and I am so satisfied with my purchase and the excellent coffee it produces. That being said I do feel tempted to try something with flow control….

Using a funnel to get grounds in puck, then use a lid of any sort to cao it, and shake it...DONE...No shaker, no WDT. No streams.down the middle.
Is it possible that you do a shootout of cheap espresso machines? I personally am interested in one without the milk thing.

Would you find a technology interesting that can deliver anywhere from 1-10 bar, always with the set pressure, mostly independent from puck resistance and flow rate? Meaning, regardless of the the change of puck resistance during a shot, it will always deliver the same pressure, by changing the flow rate as required to achieve the set pressure? Could that be helpful/interesting in any way?

Sir I am curious, if i grind a light roast which way do i go for a dark roast. Do I grind a dark roast finer or coarser than a light roast with everything else the same. Asking more for pour over but not looking for like grind size or anything

Hey lance, do you have any opinions on grinders with DRM burrs? It seems like the logical extreme of using an auger as a prebreaker. I am planning on getting a Hedone Honne when they release their V2 sometime around September and wasn't sure if you said anything on this style of burr mechanism before.

Can someone refer me to an expert that can help me get started on the finer art of brewing espresso? I feel like I'm stalled at a point between beginner and expert. I have some experience applying theory to practice, but I still haven’t achieved the art of consistency, atmospheric effects, and so many of the advanced techniques. I don’t learn as much from videos as I probably should. I would like to find an “expert” who can help me via streaming or tele instruction. I own a Rancilio Silvia Pro (w/ PID).
