This looks delicious. I am gonna try it. I think in America most pastry sheets would be 1/2 the size of yours so I will have to adjust.

It's not all that easy to find double cream in Canada. Is whipping cream, which is usually 35% butter fat, a reasonable substitute?
Dobbel cream is 48%. But yes you can substitute it with whipping cream (I also have to use whip) and in many recipes it’s fine
Double cream over here in the UK would be "heavy cream" for you. Hope this helps

Not sure if you're in the US or not but coriander is cilantro.
You mean coriander powder? No that's ground from the seed, fresh leaves have completely different flavour.
