Nice to see cooking can be educative and informative at the same time and not always a chore.We chefs devote our time and basically our lives to our job and the food we make only to end up under-appreciated and some even under paid haha. The efforts you put into your videos are second to none, definitely worth my time
This is so true and not talked about enough,I'm in my mid 50's now. Been working as a chef for 27 years now and I can say we don't get paid enough, still can't set up a restaurant of my own, it's crazy the work we put into it but I guess we do it cause we love it don't we ?

Not "trashing" just trying to make a point, if I have a dish executed perfectly I will hunt down the chef so I can thank he/she face to face for that delightful meal. I'm happy they're happy.... Currently I can average $8500 weekly through trading which is way more than my monthly salary as a chef and I don't even have to do much work. Doesn't matter if the economy is good, or my salary is delayed , great wealth managers will always make returns

Matty being from Toronto and doing a carbonara video reminded me of a place in TO called Guu Izakaya. They have an udon carbonara made with peameal bacon and instead of an egg-cheese emulsion, it's a sous vide egg on top. It's so good.

I wish you could do a show with Jacques Pépin, the master of all masters for eggs, check out his tutorials on that stuff. My egg game is not Matty level at all, but after Jacques it has certainly been elevated, I believe there is nuance that Matty can learn from the GOAT too. I say this because JP always says he judges how good a chef is from their omelet skills. There is much to be learned padawan. When I do the Carbonara I add the pasta to the egg cheese mixture then into the fried guanchally. Add pasta water as needed.

I cooked omurice for a week straight to try and learn how to get the egg right and I still make mistakes often, it really is an art form
Try with a smaller sautee pan. Less surface contact leaves you with more gooey egg. Either way. I frickin loved this video and I love you, Matty.
