雞翼400克
豆豉1湯匙(約15克)
蒜頭、薑、蔥適量
紹興酒1湯匙
生抽1茶匙
老抽1茶匙
糖1茶匙
鹽1/4茶匙
蠔油少許
胡椒粉少許
澱粉1湯匙
油1湯匙
🟢步驟:
1️⃣ 豆豉洗淨,和蒜頭一起略為剁碎,如要更香可把它爆炒一下。
2️⃣ 將雞翼洗淨吸乾水,斬件。雞翼用蒜頭豆豉、薑片、少許胡椒粉、1/4茶匙鹽、1茶匙糖、1茶匙生抽、1茶匙老抽、少許蠔油、1湯匙紹興酒、1湯匙澱粉和1湯匙油拌勻,醃半小時。
3️⃣ 將雞翼均勻鋪在碟上,不要重疊。
4️⃣ 水滾下鍋,大火蒸10-12分鐘(因應自家火力而定)。
5️⃣ 取出雞翼,撒上蔥花灒入熱油,家庭吃飯不灒油也可以。
📌豆豉是以黑豆或黃豆經過發酵而製成的豆製品,味微鹹帶醬香,菜式風味獨特,是中菜常用調味料。
🟢 Ingredients:
Chicken wings, 400g
Fermented soybeans, 1 tablespoon (about 15g)
Garlic, ginger, spring onions (scallions), as needed
Shaoxing wine, 1 tablespoon
Light soy sauce, 1 teaspoon
Dark soy sauce, 1 teaspoon
Sugar, 1 teaspoon
Salt, 1/4 teaspoon
Oyster sauce, a small amount
White pepper powder, a small amount
Cornstarch, 1 tablespoon
Oil, 1 tablespoon
🟢Cooking Directions:
1️⃣ Wash the fermented soybeans and chop them together with some garlic. You can also stir-fry them for a more fragrant aroma.
2️⃣ Wash the chicken wings and pat them dry. Cut them into pieces. Mix the chicken wings with the chopped garlic and fermented soybeans, ginger slices, a pinch of white pepper powder, 1/4 teaspoon salt, 1 teaspoon sugar, 1 teaspoon light soy sauce, 1 teaspoon dark soy sauce, a dash of oyster sauce, 1 tablespoon Shaoxing wine, 1 tablespoon cornstarch and 1 tablespoon oil. Marinate for half an hour.
3️⃣ Arrange the chicken wings evenly on a plate, without overlapping.
4️⃣ Bring water to a boil and steam over high heat for 10-12 minutes (depending on the intensity of your stove).
5️⃣ Take out the chicken wings and sprinkle with spring onions. You can also add hot oil, but it's optional for home-cooking purposes.
