Pizza Dough Machine Mixed | How to

  • Watch Master Pizzaiolo Emiliano Maturo show you how easy it is to make traditional Napolitan pizza dough at home using a stand mixer.
    Emiliano will show you step by step in real time the process and how the dough develops as the various ingredients are added and mixed together.
    INGREDIENTS TO MAKE FOUR 250g DOUGH BALLS:
    800 g Type "00" flour
    400 mL water initially
    9g Dry Yeast
    12g salt
    100mL of water for adding later
    METHOD:
    Add the flour and 400mL of water to the mixer bowl
    Add the yeast
    Start the mixer on low-medium setting
    After at least 4 minutes add the salt (adding the salt too soon can kill the yeast)
    Over the next several minutes, as the dough and water mix together, slowly add some of the 100 mL of water, a little bit at time.
    Continue to mix.
    Increase the mixing speed to little bit above the middle speed and when the dough is thoroughly mixed, continue to mix for a further 15 minutes.
    When mixed, remove the dough and knead for a couple of minutes.
    Place the dough into a bowl and lightly cover smear some olive oil over the dome of the dough. Do not over-do the oil.
    Cover the bowl with a damp towel.
    Leave on a bench, out of direct sunlight, for about 30 minutes.
    Remove the dough and split into 4 even pieces.
    Shape the dough into balls.
    To use on the same day, cover the dough balls with plastic wrap or place in a container with a lid and leave for at least 6 hours. The dough is now ready to use.
    For a better result, place the covered dough balls in the fridge for 24 hours. Remove the dough container at least 2 hours before needed to allow the temperature to normalise to room temperature. Make sure to keep the dough covered (ideally left in the container) until you are ready to use the dough.
    For long term storage you can also freeze the dough balls for later use.

    Great recipe I have used several times with great results. Thankyou so much for sharing. Please note that you use 400ml warter initially and add an additional 100ml (in the written instructions/recipe you have listed 300ml + 100ml). Iook forward to future vids.
