I made these today, but instead of buttermilk I used the same amount of milk and added lemon juice from a small lemon , or you can use half a regular lemon and let that sit until it looked curdled. Also I used 1/2 cup wheat flour and 1 cup of white flour. Came out PERFECT in case anyone needs a substitute for buttermilk 😊

This recipe is almost the same as the one I'm currently using. It doesn't call for buttermilk though. Just reg milk. I'd rather stick to the one I'm using because I don't buy buttermilk. Although I bake a lot very few of my recipes call for it. If I do need buttermilk I use distilled vinegar to get the job done. Works every time. I know lemon juice will do the same but when I have lemons I juice and zest them then toss both into freezer bags if they're not going to be used right away. Because I measure out my juice for later bakes I can't touch them, lol. And yes, you can freeze the zest with no issues. The great thing about that is. When you need some zest all you have to do is pull out the amount needed then use in your recipe... 👍

I made them for my family, and wow! They were great! Like a few others who don’t keep buttermilk regularly in their fridge, I had to substitute it for milk that I soured with vinegar. And I used maple syrup in the batter instead of sugar.
I want to try cooking it on a waffle iron! Also, for a bit more fibre, I could add a bit of quick cook rolled oats, reducing the flour to keep the wet/dry balance.
But there’s absolutely nothing wrong with your recipe! Just amazing!

Going to try these and maybe some chopped pecans or walnuts as well. Been making pancakes and french toast for 50 years and never put oil or butter in the pan. No matter what pan I use including cast iron, when the pancake gets a good bubble pattern they will release. Always. Also I cook at medium low. Takes a little longer but gives more time for the pancake or toast to cook through without burning. Thanks mom!!!

I finally made these this morning. In one batch I plopped in some blueberries to test. These were really good! I teased Natasha in a previous post about putting five of these on her plate but watched my wife plow through four. Four is a lot for Mrs. Jonstigator. Really good with the blueberries but you would not miss them. This recipe is easy, quick, and very tasty. I will be making these again. Thank you!

As stated, I made these again with a side of your oven baked bacon. I waited a week, and it was hard. I just had to have these again. This is my Sunday dinner believe it or not.
Next pancake I will be trying your lemon ricotta. They look splendid!

Good one. Really easy and I was surprised by how sweet they were with just a little sugar. I actually didn't have white flour so I just used whole wheat and they were still good.

The B E S T! So many recipes just don't work, but this one is so easy and the pancakes are so good. I used oat milk instead of buttermilk, works fine too. Maybe they're less fluffy than Natasha's, but tasty anyway.
