  • Curd/dahi is a superfood and here's how you can enjoy loads of it at home. Learn how to make fresh dahi, easy and fuss-free way!
    DAHI
    Ingredients
    2 litres milk
    2 tbsps yogurt
    Method
    1. Heat milk in a deep non-stick pan, bring it to a boil. Take the pan off the heat and allow the milk to cool till it becomes lukewarm.
    2. Take yogurt in a bowl, add ½ cup of the milk and mix well. Add this mixture into the remaining milk mixture and mix.
    3. Transfer the mixture into a wide bowl. Cover and set aside in a warm place for 4-5 hours.
    4. Refrigerate the dahi and serve as required.

    Very good recipe, thank you. The only thing I would change is the white lettering on top of the white milk /dahi. It’s difficult to read.

      @@msr5296 the recipe is very very simple but you should do it with care. Heat the right quantity of milk required as per the number of persons to be served. The milk has to come to the boiling point and it will rise and try to spill. At that time remove from the oven and keep that quantity of milk required for curd in a vessel and close it with a lid. When the temperature of the milk is lukewarm pour for to five drops of buttermilk and keep it aside. After pouring buttermilk do not stir the milk. Don't allow the milk to cool down completely and ensure it is lukewarm when adding buttermilk. You can do it when you go to bed at night or if you want for lunch then do it by 7am in the morning.       @@msr5296 First of all you should get good quality milk. Never add water to the milk. Boil the quantity of milk that is required for making curd depending on the number of persons. If you want curd for lunch time then by 7am boil the milk allow it to cool for slightly warm temperature and then add teaspoon of buttermilk and slightly stir. Cover it and set aside. By 12 noon the curd should be ready. In summer time do it by 7am and check curd formation by 11am and if ready keep it in the refrigerator. Likewise for curd required for dinner time start the process by 4pm in summer and by 7pm curd should be ready. In peak winter it will take a long time for curd formation. So do it by 6pm and by morning 6am curd should be ready for lunch. Winter dinner time requirement make the curd by 11am. Try this and let me know. Do not shake or disturb the milk vessel after putting drops of buttermilk. Good luck
