Just wash well and dry all utensils and the bowl before starting, then the oven temperature is the best secret to a perfect pavlova ;)
p.s. The longer you keep (in an enclosed box) the dryer will be. So make sure you make it a day before. BUT, DO NOT PUT IT IN THE FRIDGE!
